  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1/2 cup Plain Yogurt
  • 1/2 cup Buttermilk
  • 1/3 cup Whole Milk
  • 2 1/2 cups Sifted Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Dried (Culinary Lavender Buds)
  • Optional: Culinary Dried Lavender for Sprinkling Over Teacakes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together unsalted butter and granulated sugar until light and fluffy (3-5 minutes).
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla and almond extracts.
  4. In another bowl, whisk cake flour, baking soda, and salt. Gradually add this dry mix to the wet ingredients while alternating with yogurt, buttermilk, and whole milk until just combined.
  5. Gently fold in dried culinary lavender buds.
  6. Fill greased mini cake tins two-thirds full with batter and bake for about 20 minutes or until a toothpick inserted comes out clean.
  7. Prepare the lavender glaze by whisking powdered sugar, vanilla extract, and dried lavender buds until smooth.
  8. Once cooled slightly, drizzle glaze over each tea cake.
