  • 1/4 cup Dutch process cocoa powder
  • 2 large egg whites
  • 1/2 cup light brown sugar
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter. Press this mixture into cupcake liners in a muffin tin.
  2. Melt the salted butter and chopped chocolate together in a saucepan over low heat until smooth. Stir in granulated sugar, then let cool slightly before adding eggs and vanilla.
  3. In another bowl, whisk together flour and cocoa powder. Gradually add this to the chocolate mixture until just combined.
  4. For the frosting, beat egg whites until foamy; gradually add brown sugar until stiff peaks form. Mix in cream of tartar and vanilla.
