  • 7 red or white new potatoes (Yukon gold potatoes also work)
  • 6 large eggs
  • 3 celery ribs (sliced)
  • 4 spring onions (sliced)
  • 6 radishes (grated)
  • 1 cup mayonnaise
  • 1 tablespoon fresh dill (chopped)
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper

Instructions

  1. Boil the Potatoes: In a large pot, place the potatoes and cover with water. Bring to a boil, salt the water, then simmer for about 20 minutes until tender but firm. Drain and cool under cold water.
  2. Hard-Boil Eggs: In another pot, bring water to a boil and gently add eggs. Cook for 12-14 minutes, then transfer to an ice bath. Once cooled, peel and dice.
  3. Mix Ingredients: In a large bowl, combine diced potatoes, eggs, mayonnaise, celery, radishes, green onions, dill, salt, and pepper. Stir gently until coated.
  4. Chill: Allow the potato salad to chill in the fridge for at least an hour before serving.
