  • 1/2 cup unsalted butter (room temperature)
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup lemon juice (about 23 lemons)
  • 1 tbsp lemon zest (finely grated)
  • 3 large eggs (room temperature)
  • 1 1/2 cups granulated sugar
  • 1/2 cup all-purpose flour (sifted)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, cream together butter and powdered sugar until fluffy. Gradually mix in 1 cup flour until combined. Press into the bottom of an 8-inch square baking pan and bake for about 20 minutes until golden.
  2. While the crust cools, whisk together eggs and granulated sugar until smooth. Stir in lemon juice and zest, then sift in remaining flour and mix gently.
  3. Pour lemon mixture over baked crust and return to oven for another 25-30 minutes until set with a slight jiggle in the center.
  4. Allow cooling completely before slicing into squares and dusting with powdered sugar.
