  • 5 ears fresh corn (shucked)
  • 2 medium roma tomatoes (diced)
  • 1 medium English cucumber (diced)
  • 1 medium avocado (diced)
  • 1/2 medium red onion (minced)
  • 1/2 cup chopped fresh basil
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon apple vinegar
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of water to a boil. Add the shucked corn and cook for about 5 minutes until tender. Remove from heat and allow to cool.
  2. While the corn cools, dice the tomatoes, cucumber, avocado, and mince the red onion.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, apple vinegar, salt, and pepper.
  4. Once the corn has cooled, cut the kernels off the cob and combine with the diced vegetables in a large bowl. Pour dressing over the salad and toss gently until well mixed.
