  • 2 cups strawberries (hulled and sliced)
  • 2 1/2 cups flour
  • 1 cup plus 2 Tbs sugar
  • 2 large eggs
  • 4 Tbs butter (melted)
  • 3/4 cup plain Greek yogurt
  • 1/4 cup milk
  • 2 1/2 tsp baking powder
  • For the streusel topping: 1/4 cup flour, 1 1/2 Tbs sugar, a pinch of salt, and warm melted butter

Instructions

  1. Preheat your oven to 425°F.
  2. Prepare the streusel topping by mixing dry ingredients and adding melted butter until crumbly.
  3. Cook down one cup of sliced strawberries with sugar until thickened; let cool.
  4. In a bowl, combine flour, baking powder, and salt. In another bowl, whisk eggs and sugar until thickened before adding melted butter, yogurt, milk, and vanilla.
  5. Combine wet and dry ingredients gently; fold in remaining strawberries.
  6. Grease muffin pan and fill each cup with batter; add cooled strawberry filling on top.
  7. Sprinkle with streusel topping and bake for about 17 minutes or until golden brown.
