  • 5 Tbsp butter (divided)
  • 1 32 oz package frozen whole kernel corn (thawed)
  • 1 1/2 cups half and half
  • 3 large eggs
  • 2 Tbsp granulated sugar
  • 1/2 tsp salt
  • 1/8 tsp ground nutmeg
  • 1 1/2 cups sharp white cheddar or pepper-jack cheese (divided)
  • 1 sleeve round butter crackers (crushed and divided)

Instructions

  1. Preheat your oven to 325°F (165°C) and butter a 13×9-inch baking dish with 1 Tbsp of butter.
  2. In a medium bowl, whisk together the half and half, eggs, sugar, salt, and nutmeg until smooth.
  3. In a large bowl, combine thawed corn with the half and half mixture, along with 3/4 cup cheese and 1/2 cup crushed crackers. Mix well.
  4. Pour the corn mixture into the prepared baking dish and bake for 30 minutes.
  5. While baking, melt the remaining butter in a small bowl and mix it with the leftover cracker crumbs.
  6. After initial baking, sprinkle reserved cheese on top followed by the buttery cracker mixture. Bake for an additional 20-30 minutes until golden brown.
  7. Allow to cool for about 5 minutes before serving.
