  • 1 tablespoon olive oil
  • 1 ½ pounds salmon (cut into 4 pieces)
  • ½ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ¼ cup all-purpose flour
  • 2 tablespoons unsalted butter
  • 1 medium shallot (finely chopped)
  • ½ cup chicken broth
  • 1 lemon (zested and juiced)
  • 3 tablespoons capers (drained)
  • 1 cup heavy cream
  • 1 tablespoon dill (finely chopped for serving)

Instructions

  1. Prepare salmon by cutting it into four equal pieces. Season with garlic powder and salt, then dredge in flour.
  2. Heat olive oil in a pan over medium heat and sear the salmon for about two minutes on each side until golden brown. Remove and set aside.
  3. In the same pan, add butter and chopped shallots. Sauté until soft.
  4. Add capers, lemon juice, chicken broth, and zest to the shallots; simmer until reduced by half.
  5. Stir in heavy cream and adjust seasoning if necessary.
  6. Return the salmon to the pan, spooning the sauce over it as it cooks through for another three to four minutes.
  7. Serve topped with dill and optional lemon slices.
