  • 1 tbsp olive oil
  • 400g (6) chicken or turkey sausages (any flavour)
  • 1 onion (chopped)
  • 2 stalks celery (sliced)
  • 2 carrots (sliced)
  • 2 cloves garlic (minced)
  • 1/2 tsp dried thyme
  • 3 tbsp plain/all-purpose flour
  • 1 litre/4 cups chicken or vegetable stock
  • 2 bay leaves
  • 100g/1/2 cup wild rice
  • 3 potatoes (medium, peeled and cut into chunks)
  • 375ml/1 1/2 cups single/light cream
  • Salt to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Remove sausage from casings, add to the pot, and cook until golden brown. Transfer to a plate.
  2. In the same pot, add onion, celery, and carrots. Cook for 10 minutes until softened. Add garlic and thyme; cook for an additional 30 seconds.
  3. Sprinkle flour over veggies and stir to create a roux. Gradually add chicken stock, bay leaves, and wild rice.
  4. Simmer on low-medium heat for 30 minutes. Add cubed potatoes and continue cooking for another 15 minutes until tender.
  5. Stir in single cream and season with salt to taste before serving.
