Pistachio Tiramisu is a luxurious dessert that perfectly marries the nutty flavor of pistachios with the creamy layers of classic tiramisu. This no-bake treat is both indulgent and simple to prepare, making it an ideal option for any gathering or a delightful way to treat yourself after a long day.

Ingredients

  • 100 ml strong coffee
  • 200 g savoiardi sponge fingers
  • 300 ml double cream
  • 75 g icing sugar
  • 250 g mascarpone
  • 100 g pistachio cream (plus extra for decoration)
  • Chopped pistachios (for garnish)

Instructions

  1. In a large bowl, whisk together double cream and icing sugar until soft peaks form. In another bowl, combine mascarpone and pistachio cream until smooth, then fold into the whipped cream.
  2. Pour the strong coffee into a shallow dish. Quickly dip each sponge finger into the coffee on both sides and layer them at the base of your dish.
  3. Spread a layer of the pistachio cream mixture over the soaked sponge, followed by another layer of dipped sponge fingers. Repeat until all ingredients are used, finishing with cream on top.
  4. Decorate with additional pistachio cream and chopped pistachios. Refrigerate for at least 4 hours or overnight before serving.
