  • 3 tablespoons extra virgin olive oil
  • 4 cloves fresh garlic, minced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup finely grated Parmesan cheese, divided

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Remove leaves and stem from the cauliflower; chop into bite-sized florets.
  3. In a large bowl, whisk together olive oil, minced garlic, garlic powder, smoked paprika, salt, and pepper.
  4. Toss cauliflower florets in the mixture until evenly coated.
  5. Add half of the grated Parmesan cheese and mix again.
  6. Spread the coated cauliflower in a single layer on the baking sheet.
  7. Roast for about 20 minutes until beginning to brown.
  8. Sprinkle remaining Parmesan over the top and roast for an additional 10-12 minutes until crispy and golden brown.
  9. Let cool slightly before serving; garnish with fresh parsley and lemon wedges if desired.
