  • Store-bought pie dough (2 sheets)
  • Unsalted butter or plant-based alternative (2 tbsp)
  • Finely chopped Fuji or Honeycrisp apples (2 ½ cups)
  • Light brown sugar (¼ cup)
  • Ground cinnamon (1 tsp + extra for topping)
  • Lemon juice (from ½ lemon)
  • Cornstarch (½ tsp) mixed with water (1 tbsp)
  • Egg (1, for wash)
  • Granulated sugar (½ cup)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan over medium heat, melt the butter and add chopped apples, brown sugar, cinnamon, and lemon juice. Cook until apples are tender (about 10 minutes).
  3. Mix cornstarch and water; stir into the apple mixture until thickened.
  4. Roll out pie dough and cut into apple shapes.
  5. Assemble by placing filling on half of the shapes, sealing them with another shape on top.
