  • 2 lbs. chicken breast
  • 1 cup Greek yogurt
  • 3 tbsp extra virgin olive oil
  • 4 garlic cloves, finely grated or minced
  • Juice of 1 lemon
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp kosher salt
  • 1 tsp dried oregano or thyme
  • Fresh cracked pepper
  • 2 tbsp extra virgin olive oil
  • ½ medium yellow or white onion, chopped
  • 2 cups Basmati rice
  • 3 cups chicken broth
  • Kosher salt
  • 1 large cucumber, chopped
  • 4 roma tomatoes or 2 large beefsteak tomatoes, chopped
  • ½ cup loosely packed mint or parsley, chopped
  • Kosher salt and fresh cracked pepper
  • 4 slices naan or pita bread for serving
  • 8 oz. hummus for serving

Instructions

  1. Prepare the marinade by mixing Greek yogurt, olive oil, minced garlic, lemon juice, tomato paste, paprika, salt, oregano (or thyme), and pepper. Marinate chicken for at least 30 minutes.
  2. Cook chopped onions in olive oil until translucent. Add rinsed Basmati rice and stir to coat; then add chicken broth and salt. Bring to boil, cover, and simmer until fluffy.
  3. Preheat grill and cook marinated chicken skewers for about 5-7 minutes on each side until golden brown.
  4. Assemble bowls with rice at the base, topped with grilled chicken and chopped vegetables. Drizzle with olive oil and garnish with fresh herbs.
  5. Serve alongside warm pita bread and hummus.
