  • 6 large russet potatoes
  • 1/4 cup unsalted butter
  • 4 oz cream cheese
  • 2/3 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper (to taste)
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups cooked chicken (diced)
  • 1/4 cup green onions (diced)

Instructions

  1. Preheat your oven to 375°F.
  2. Wash, peel, and dice the potatoes. Boil them in salted water until tender.
  3. Drain and return potatoes to the pot. Add butter, cream cheese, sour cream, and milk; mix until creamy.
  4. Stir in garlic powder, salt, pepper, half of the cheddar cheese, and all of the diced chicken.
  5. Transfer mixture to a casserole dish; top with remaining cheese and bake for 25–30 minutes until golden brown.
  6. Garnish with diced green onions before serving.
