  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic (minced)
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice
  • 1 cup heavy cream
  • 1 pound uncooked potato gnocchi
  • 1/2 cup freshly grated parmesan cheese
  • 2 cups fresh baby spinach

Instructions

  1. Cut chicken breasts in half lengthwise, season with garlic powder and lemon pepper.
  2. In a skillet, heat olive oil and butter over medium-high heat. Sear chicken for about 5-6 minutes on each side until golden brown. Transfer to a plate.
  3. Reduce heat to medium, add minced garlic to the skillet and sauté for about 30 seconds.
  4. Stir in chicken broth and lemon juice, scraping up any browned bits from the pan.
  5. Pour in heavy cream and add uncooked gnocchi; stir to combine. Cook uncovered for about 5-7 minutes until gnocchi is tender and sauce thickens.
