  • 1/2 cup granulated sugar
  • 3 egg yolks
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 4 tbsp unsalted butter (room temperature)
  • 7 tbsp unsalted butter (room temperature)
  • 3.5 ounces full-fat cream cheese (room temperature)
  • 1 cup granulated sugar
  • 1 whole large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 tsp vanilla extract
  • 1 3/4 cup all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • Powdered sugar (for rolling)

Instructions

  1. In a small pot, combine sugar, lemon juice, egg yolks, and lemon zest. Cook on medium-low heat while stirring until thickened (about 12 minutes). Stir in butter until melted and set aside to cool.
  2. Preheat oven to 350°F (180°C). Cream room temperature butter and cream cheese in a large bowl until smooth. Add granulated sugar and mix until fluffy.
  3. Incorporate whole egg, extra yolk, and vanilla extract into the mixture. Gently fold in flour, baking powder, and salt until just combined.
  4. Shape dough into balls and roll in powdered sugar before placing on parchment-lined trays. Create wells in each ball using the bottom of a tablespoon and fill with lemon curd.
  5. Freeze cookies for 1-2 hours until solid. Bake for 12-13 minutes or until golden brown.
