  • 23 banana peppers (finely chopped)
  • 1 small green bell pepper (finely chopped)
  • 1 small white onion (very finely minced)
  • 3 cloves garlic (minced)
  • ½ cup white vinegar
  • ¼ cup olive oil
  • 2 tablespoons sugar
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • ½ teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon pickled jalapeño brine (optional)

Instructions

  1. Finely chop all peppers, onion, and garlic.
  2. Heat olive oil in a saucepan over medium heat and sauté the minced onion until softened.
  3. Add minced garlic and cook until fragrant.
  4. Stir in the chopped peppers and cook until they begin to soften.
  5. Mix in white vinegar, sugar, salt, oregano, black pepper, and optional ingredients.
  6. Simmer the mixture on low heat for about 10-12 minutes.
  7. Remove from heat and let cool before transferring to a glass jar. Refrigerate for at least 12 hours before serving.
