  • 3 lb sweet potatoes, peeled and sliced thin (about 1/8-inch thick)
  • 1 1/2 cups heavy cream
  • 1/2 cup (1 stick) butter
  • 5 cloves garlic, finely minced
  • 1 tbsp chopped fresh thyme
  • 1 tsp cornstarch
  • Kosher salt and freshly cracked black pepper to taste
  • 1/3 cup fresh parmesan cheese, grated

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan over medium heat, melt the butter. Add minced garlic and sauté until fragrant. Stir in heavy cream and cornstarch; simmer until slightly thickened.
  3. In a greased baking dish, layer half of the sweet potatoes; season with salt and pepper. Pour half of the creamy mixture over them. Repeat layers.
  4. Top with grated parmesan cheese. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes until golden brown.
  5. Let it cool for a few minutes before serving.
