  • 3 bell peppers (halved)
  • ⅔ cup uncooked white rice
  • 1 small red onion (diced)
  • 2 cloves garlic (minced)
  • ½ cup cherry tomatoes (quartered)
  • ½ cup kalamata olives (chopped)
  • ½ cup feta cheese (divided)
  • Fresh dill (to taste)
  • 1 tablespoon extra virgin olive oil
  • ½ cup water

Instructions

  1. Preheat oven to 350°F.
  2. Cook white rice according to package instructions.
  3. Slice bell peppers in half and remove seeds.
  4. In a skillet, heat olive oil and brown the ground chicken with salt and pepper until cooked through.
  5. Add garlic, onion, zucchini, and Italian seasoning; cook for an additional two minutes.
  6. Combine the cooked rice with the chicken mixture, olives, tomatoes, half of the feta, and dill in a bowl.
  7. Stuff each bell pepper with the mixture and sprinkle remaining feta on top.
  8. Place stuffed peppers in a baking dish with water around them; cover with foil and bake for 40–45 minutes.
