  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup softened butter (for frosting)
  • 4 cups powdered sugar
  • 1 dash salt (for frosting)
  • 1 Tbsp lemon zest (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare cookie sheets by lining them with silicone mats or lightly greasing them.
  2. In a large mixing bowl, cream together softened butter and sugar until light and fluffy. Beat in eggs, lemon juice, and zest until well combined.
  3. In another bowl, mix flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture until fully incorporated.
  4. Roll tablespoon-sized balls of dough onto prepared sheets and flatten slightly using a sugared glass.
  5. Bake for about 9-10 minutes or until the bottoms are barely golden brown. Cool on pans for several minutes before transferring to wire racks.
