  • 15 ounces black-eyed peas (drained and rinsed)
  • 15 ounces corn (drained)
  • 1 cup diced bell peppers (mix of colors)
  • 2 diced Roma tomatoes
  • ¼ cup diced red onion
  • ¼ cup finely chopped cilantro
  • ½ cup olive oil
  • ¼ cup apple cider vinegar
  • ¼ cup lime juice
  • 1 clove minced garlic
  • 1 teaspoon salt

Instructions

  1. Rinse the black beans and black-eyed peas thoroughly under cold water.
  2. In a large bowl, combine the beans, corn, bell peppers, tomatoes, onion, and cilantro.
