  • 2 tablespoons white grape juice (chilled)
  • 5 large Granny Smith apples (about pounds)
  • 4 large McIntosh apples (about 2 pounds)
  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons unsalted butter
  • ½ cup heavy cream (or dairy-free alternative)
  • 1¼ cups all-purpose flour for streusel topping
  • 1/3 cup light brown sugar
  • 1/3 cup granulated sugar
  • 7 tablespoons unsalted butter (melted)

Instructions

  1. For the crust, combine ¾ cup flour, sugar, and salt in a food processor. Add cold butter and shortening until crumbly. Mix in white grape juice and ice water until slightly tacky.
  2. Roll out the dough into a circle and fit it into a pie plate. Blind bake at 350°F for about 40 minutes.
  3. Peel, slice, and toss apples with sugar, cinnamon, and salt; cook briefly in butter to soften.
  4. Drain excess liquid from cooked apples; simmer liquid with cream until thickened.
  5. Make streusel topping by mixing remaining flour and sugars with melted butter until crumbly.
  6. Layer apple filling in the crust; drizzle with thickened cream and top with streusel. Bake at 425°F for an additional 20 minutes or until golden.
