  • 1 cup light brown sugar (packed)
  • ½ cup granulated sugar
  • ¼ cup honey
  • 2 large eggs (room temperature)
  • 2 teaspoons vanilla
  • ½ cup unsalted butter (room temperature)
  • 2 tablespoons honey
  • ½ teaspoon cinnamon (optional)
  • ½ teaspoon kosher salt
  • 1 teaspoon vanilla
  • 2 cups powdered sugar
  • Flaky sea salt (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together cornmeal, all-purpose flour, baking powder, cornstarch, and kosher salt.
  3. In another bowl, beat the unsalted butter with light brown sugar and granulated sugar until light and fluffy.
  4. Add the eggs one at a time along with the vanilla extract and beat well after each addition.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Form large balls from the dough and roll them in additional cornmeal before placing them on a baking sheet lined with parchment paper.
  7. Bake for about 15 minutes or until they start to turn golden around the edges.
  8. While the cookies cool, prepare the frosting by beating together room-temperature butter, honey, cinnamon (if using), kosher salt, vanilla extract, and powdered sugar until smooth.
  9. Once cooled completely, generously frost each cookie with your honey butter frosting and sprinkle flaky sea salt on top.
