  • 1 1/2 lbs chicken breasts or thighs (chopped)
  • 1 yellow onion (diced)
  • 3 stalks celery (chopped)
  • 3 carrots (chopped)
  • 8 ounces baby Bella mushrooms (sliced)
  • 2 cups low sodium chicken broth
  • 2 cups milk
  • 2 cups shredded sharp cheddar cheese
  • 3/4 cup panko breadcrumbs

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Season the chicken with salt, pepper, and paprika.
  3. Sear the seasoned chicken in olive oil until golden.
  4. Sauté onions, carrots, celery, and garlic until tender; add to the chicken.
  5. Caramelize mushrooms in butter; mix back with chicken.
  6. In a separate pot, create a creamy sauce by whisking together broth, milk, flour, Dijon mustard, bouillon, and spices until thickened.
  7. Combine everything in a casserole dish and top with panko breadcrumbs mixed with butter.
  8. Cover with foil and bake for about 30-35 minutes until bubbly.
