  • 2 cups low fat milk
  • 2 cups water
  • 1 teaspoon Kosher salt
  • 1 cup yellow cornmeal grits
  • 2 tablespoons salted butter
  • 1 cup shredded white cheddar cheese
  • pounds shrimp (peeled & deveined)
  • 1½ cups chopped onion
  • 3 cloves garlic (minced)
  • 3 tablespoons cornstarch
  • 1½ cups low sodium chicken broth
  • 1 cup heavy cream
  • 1 tablespoon butter
  • 1 teaspoon cayenne pepper
  • 1 teaspoon hot sauce
  • ½ teaspoon Kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup chopped green onions
  • ¼ cup chopped fresh parsley

Instructions

  1. In a medium saucepan, combine water, milk, and Kosher salt; bring to a boil. Gradually whisk in cornmeal grits and simmer until thickened.
  2. Stir in butter and cheddar cheese until melted and creamy.
  3. In a skillet, sauté onions and garlic until softened. Add shrimp and cook until pink.
  4. Pour in chicken broth and thicken with cornstarch; season with spices.
  5. Mix cooked shrimp mixture into cheesy grits; serve warm.
