  • 1 lb elbow macaroni
  • 1/2 cup shallots (finely minced)
  • 1 cup red bell pepper (cored, seeded, and finely chopped)
  • 1 cup celery (finely chopped)
  • 2 tbsp good-quality olive oil (divided)
  • 1 tsp smoked paprika
  • 1 tsp Cajun seasoning
  • 2 tsp Kosher salt
  • 1 tsp freshly ground black pepper
  • 3 tbsp whole grain Dijon mustard
  • 1 1/2 cups mayonnaise
  • 3 tbsp apple cider vinegar
  • 1 tbsp fresh lemon juice
  • 1 tsp hot sauce
  • 1/4 cup fresh parsley (chopped, for garnish)

Instructions

  1. Cook elbow macaroni in salted boiling water for about 9 minutes until tender but firm. Drain and rinse under cool water.
  2. In a large bowl, mix the rinsed pasta with 1 tablespoon olive oil.
  3. In a separate bowl, whisk together remaining olive oil, mustard, mayonnaise, vinegar, lemon juice, hot sauce, and seasonings.
  4. Combine dressing with pasta and veggies until well coated.
  5. Garnish with chopped parsley before serving.
