Ingredients

Scale
  • 1 pound potato gnocchi
  • 2 tablespoons olive oil
  • 4 slices turkey bacon, chopped
  • 2 cups fresh broccoli florets
  • 8 ounces Boursin cheese (herb and garlic flavor)
  • 0.5 cup chicken or vegetable broth
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 0.25 cup grated Parmesan cheese (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. 1. Bring a large pot of salted water to boil and cook gnocchi according to package instructions until they float (about 2-3 minutes). Drain and set aside.
  2. 2. In a skillet, heat olive oil over medium heat. Add chopped turkey bacon and cook until crispy (about 5-7 minutes). Remove bacon but keep drippings in the skillet.
  3. 3. Add broccoli florets to the skillet; sauté for about 4-5 minutes until tender but bright green. Stir in garlic powder, seasoning with salt and pepper.
  4. 4. Combine cooked gnocchi with sautéed broccoli in the skillet. Pour in chicken or vegetable broth and add Boursin cheese. Stir until combined and creamy; adjust thickness with more broth if needed.
  5. 5. Fold in crispy turkey bacon, warm through, then serve garnished with grated Parmesan and fresh parsley.
