  • 1 (425g) Can Chickpeas
  • 1/4 C + 1 Tbs Dill Pickles (finely chopped)
  • 1/4 C Purple Onion (finely chopped)
  • 2 Tbs Just Mayo or Vegenaise
  • 2 1/2 tsp Stone Ground Mustard
  • 1 1/2 tsp Apple Cider Vinegar
  • Fresh Dill
  • Black Pepper
  • Salt
  • Multigrain Bread or Optional Gluten Free Bread
  • Sprouts
  • Kale
  • Shredded Carrots
  • Lettuce
  • Tomatoes

Instructions

  1. Mash the chickpeas in a bowl until mostly smashed, leaving some whole for texture.
  2. Stir in dill pickles, purple onion, mayo, mustard, vinegar, salt, fresh dill, black pepper, and optional turmeric until well combined. Taste and adjust seasoning if necessary.
  3. Spread the mixture onto multigrain or gluten-free bread. Top with your choice of sprouts, kale, shredded carrots, lettuce, and tomatoes.
