  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)
  • 5 cups chicken broth
  • 34 small russet potatoes (sliced)
  • 3 cups kale (roughly chopped)
  • 1 cup heavy cream
  • 1 teaspoon hot sauce
  • 1 teaspoon mustard powder
  • 1 teaspoon dried parsley
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil

Instructions

  1. In a large pot, cook ground turkey over medium heat until browned. Reserve 1 tablespoon of drippings.
  2. Add butter, onions, and sauté until softened; stir in garlic and seasonings.
  3. Sprinkle flour and stir for about 2 minutes to eliminate raw taste.
  4. Gradually add chicken broth and cream while stirring; bring to a boil then reduce to simmer.
  5. Add sliced potatoes and reserved turkey back into the pot; simmer until potatoes are tender.
  6. Stir in chopped kale and simmer until wilted.
