  • 1 lb salmon fillet (no skin)
  • 12 baby potatoes
  • 2 cups grape tomatoes
  • 6 oz broccoli florets
  • 3 tbsp fresh minced garlic
  • Quality extra virgin olive oil
  • Salt and pepper
  • 2 tsp za'atar spice (divided)
  • 1 tsp coriander (divided)
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 400 degrees F.
  2. In a bowl, combine baby potatoes, grape tomatoes, and broccoli. Toss with olive oil, salt, pepper, minced garlic, za'atar spice, and coriander. Spread on a baking sheet.
  3. Pat the salmon dry and season with salt and pepper. Drizzle with olive oil and top with remaining minced garlic, za'atar, and coriander.
  4. Place the seasoned salmon on the baking sheet with veggies and drizzle with more olive oil if desired.
  5. Bake for 15-16 minutes until salmon is flaky yet moist. Squeeze fresh lemon juice over before serving.
