  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon sage
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup coconut milk (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté the diced onion, carrots, and celery for about 5-7 minutes until softened.
