  • 4 medium carrots (peeled and sliced)
  • 3 parsnips (peeled and sliced)
  • 3 celery ribs (sliced)
  • ½ medium onion (diced)
  • 1 leek (halved lengthwise, sliced, and rinsed)
  • 4 garlic cloves (minced)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 boneless skinless chicken breasts
  • 2 sprigs fresh thyme
  • 2 sprigs fresh tarragon
  • 1 bay leaf
  • 5 cups low-sodium chicken broth
  • ¼ cup roughly chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté carrots, parsnips, celery, leek, and onion for 4–5 minutes until softened. Add minced garlic, salt, and pepper; cook for an additional minute.
  2. Add fresh herbs and chicken breasts to the pot. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes until chicken is cooked through.
  3. Remove chicken from the pot and shred it on a cutting board. Return shredded chicken to the pot along with any juices and let it simmer for another 1–2 minutes.
  4. Remove herb sprigs and bay leaf before serving. Stir in chopped parsley.
