  • 4 cups chicken broth
  • 2 cans Great Northern beans (drained and rinsed)
  • 2 cups fresh baby spinach
  • ½ cup coconut cream (or heavy whipping cream)

Instructions

  1. In a large Dutch oven over medium-high heat, brown the turkey sausage until fully cooked, breaking it apart with a spoon.
  2. Reduce heat to medium; add diced onions, celery, and carrots. Sauté until onions soften, about 3-5 minutes. Add minced garlic and cook for another minute.
  3. Stir in tomato paste and seasonings (Italian seasoning, crushed red pepper, ground black pepper).
  4. Pour in chicken broth and add rinsed Great Northern beans. Bring to a gentle simmer for about 6-7 minutes until veggies are tender.
  5. Stir in coconut cream and fresh spinach; cook until spinach wilts—about 5 minutes.
