  • 1 medium spaghetti squash
  • 1 pound boneless, skinless chicken
  • 4 cloves garlic
  • 1 shallot
  • 2 tablespoons sun-dried tomatoes
  • 1 cup heavy cream
  • ⅓ cup grated Parmesan cheese
  • 3 ounces baby spinach
  • Salt and pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons butter, divided

Instructions

  1. Cook the spaghetti squash by piercing it with a knife and microwaving until tender (about 8-12 minutes) or roasting until soft. Cut in half, scoop out seeds, and shred the flesh with a fork.
  2. Season the chicken with salt, pepper, and Italian seasoning. In a skillet over medium-high heat, melt 1 tablespoon of butter and cook the chicken until no longer pink; set aside.
  3. In the same skillet, melt another tablespoon of butter and sauté minced garlic and shallots until fragrant. Add sun-dried tomatoes.
  4. Pour in the heavy cream; stir in Parmesan cheese and spinach until well combined. Return cooked chicken to the skillet.
  5. Gently fold in shredded spaghetti squash to coat with sauce.
  6. Serve hot, garnished with fresh parsley if desired.
