  • 24 turkey meatballs
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 23 celery stalks, diced
  • 2 large garlic cloves, minced
  • 1 tablespoon Italian seasoning mix
  • 1/4 teaspoon red chili flakes
  • 2 tablespoons tomato paste
  • 1 1/2 cups tomato sauce (passata)
  • 5 cups chicken stock
  • 3/4 cup orzo pasta
  • 2 cups baby spinach
  • 1/2 cup half and half (single cream)
  • 1/3 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the onion, carrot, and celery until softened (about 7 minutes).
  2. Add minced garlic, Italian seasoning, and red chili flakes; cook for another minute until fragrant.
  3. Stir in tomato paste and tomato sauce. Pour in chicken stock and add orzo; bring to a boil then reduce heat to simmer.
  4. Simmer for about 10 minutes until orzo is al dente.
  5. Stir in turkey meatballs and baby spinach; cover and cook for an additional 1-2 minutes until spinach wilts.
  6. Finally, stir in half and half and grated Parmesan cheese; season with salt and pepper to taste.
