Ingredients

  • Udon noodles
  • Fresh beef, thinly sliced
  • Chinese cabbage (or any leafy green)
  • Garlic, minced
  • Onion, sliced
  • Sesame oil
  • Soy sauce
  • Dark soy sauce
  • Chinese white rice vinegar
  • Ground black pepper

Instructions

  1. Prepare the sauce by whisking together minced garlic, sesame oil, soy sauce, oyster sauce, Chinese white rice vinegar, and cornstarch slurry. Allow it to marinate for about 10 minutes.
  2. Cook the udon noodles in boiling water for 1–2 minutes until slightly loose but chewy; drain and set aside.
  3. Create the black pepper sauce by mixing marinade drippings with dark soy sauce, oyster sauce, ground black pepper, water, and potato starch.
  4. In a heated wok with oil, sauté garlic and onions until soft. Add marinated beef and cook until browned; pour in the black pepper sauce and heat until thickened.
  5. Toss cooked udon noodles and Chinese cabbage into the wok until well-coated. Serve hot.
