  • 16 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 cup pecans (chopped)
  • For topping: light corn syrup
  • light brown sugar
  • heavy cream
  • cinnamon
  • vanilla extract

Instructions

  1. Preheat your oven to 350°F. Grease an 8×8-inch baking pan and line it with parchment paper.
  2. In a bowl, combine graham cracker crumbs, sugar, melted butter, and salt; press into the bottom of the pan.
  3. In another bowl, beat cream cheese with sugars, eggs, vanilla extract, and flour until smooth. Fold in chopped pecans.
  4. Pour the cheesecake mixture over the crust and bake for about 35 minutes until set but slightly jiggly in the center.
  5. For the topping, combine corn syrup, brown sugar, heavy cream, cinnamon, butter, vanilla extract, and salt in a saucepan; melt over medium heat.
  6. Pour topping over baked cheesecake and return to oven for an additional 10 minutes.
  7. Cool at room temperature before chilling in the fridge for at least two hours; cut into squares to serve.
