  • 1 cup green lentils
  • 3/4 cup yellow split peas
  • 810 cups vegetable broth
  • 2 teaspoons herbs de Provence
  • Salt to taste
  • 1/2 cup olive oil
  • Optional: Apple juice or lemon juice for tang

Instructions

  1. Prep your veggies by chopping them into bite-sized pieces.
  2. Combine all chopped vegetables, lentils, split peas, vegetable broth, herbs de Provence, and salt in the crockpot.
  3. Cover and cook on high for 5-6 hours or low for 7-8 hours.
  4. Once cooked, blend about 4 cups of the soup with olive oil until semi-smooth; return it to the pot.
  5. Stir in chopped kale and parsley just before serving; add a splash of apple juice or lemon juice for extra zing.
