  • 2 carrots, cut into bite-size pieces
  • 2 medium potatoes, cut into bite-size pieces
  • 1/2 yellow onion, diced
  • 2 chicken breasts, cubed
  • 2 Tbsp olive oil
  • 2 tsp ground ginger
  • 2 tsp minced garlic
  • 4 oz jar red curry paste
  • 2 cans coconut milk
  • 1/4 cup + 2 Tbsp peanut butter
  • 5 Tbsp brown sugar
  • 4 tsp soy sauce
  • Juice from 1 lime

Instructions

  1. Heat oil in a large skillet over medium-high heat. Sauté onions, carrots, and potatoes for about 4-5 minutes until slightly softened.
  2. Add chicken cubes along with ginger, garlic, and red curry paste; mix well and sauté for an additional couple of minutes.
  3. Stir in coconut milk and reduce heat to medium-low. Simmer for about 10 minutes until vegetables are tender.
  4. Add peanut butter, brown sugar, soy sauce, and lime juice; cook for another 4-5 minutes until heated through.
  5. Serve over steamed rice and enjoy!
