  • 6 oz corn chips
  • 2 lbs lean ground beef
  • 2 large eggs
  • 1 1/2 cups corn and black bean salsa
  • 1 oz taco seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 2 cups shredded Mexican cheese blend

Instructions

  1. Preheat your oven to 350F.
  2. Crush corn chips in a Ziploc bag until coarsely broken.
  3. In a large bowl, combine ground beef, eggs, crushed corn chips, half a cup of salsa, taco seasoning, salt, pepper, and garlic powder.
  4. Mix well using your hands until fully combined.
  5. Stir in one cup of shredded cheese.
  6. Line a loaf pan with foil and spray lightly with cooking spray.
  7. Press the meat mixture into the prepared loaf pan and top with remaining salsa.
  8. Bake for 40 minutes; add another cup of cheese on top and bake for an additional 10-15 minutes until cooked through (internal temperature should reach 160F).
  9. Allow to rest for five minutes before slicing. Serve warm.
