  • 1820 jumbo pasta shells
  • 12 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 4 cups fresh spinach
  • 15 oz. Ricotta cheese
  • ½ cup Parmesan cheese (grated)
  • 3 cups mozzarella cheese (shredded and divided)
  • 2 tablespoons cream cheese
  • 1 egg
  • 24 ounces marinara sauce
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ teaspoon dried basil
  • ½ teaspoon dried parsley
  • ½ teaspoon dried oregano

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil salted water and cook the jumbo pasta shells until just shy of al dente (about 13 minutes). Drain and cool.
  3. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant; add spinach and cook until wilted.
  4. In a bowl, mix ricotta, half the mozzarella, most of the Parmesan, cream cheese, egg, seasonings, and cooled spinach mixture until well combined.
  5. Spread half of the marinara sauce in a baking dish. Fill each shell with the cheese mixture and place them in the dish.
  6. Top with remaining marinara sauce and sprinkle with leftover mozzarella and Parmesan.
  7. Cover with foil and bake for 20 minutes; uncover and bake for an additional 10 minutes until bubbly and golden.
