  • 3/4 cup old-fashioned oats
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar (packed)
  • 1/2 teaspoon salt (or to taste)
  • 2 cups coarsely chopped fresh strawberries
  • 1/3 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8-inch square pan with foil and lightly spray with cooking spray.
  2. Melt the butter in a microwave-safe bowl for about 1 minute.
  3. Combine melted butter with flour, oats, sugars, and optional salt until mixed well.
  4. Set aside one heaping cup of this mixture for the topping.
  5. Press the remaining mixture into the prepared pan to form a solid base.
  6. In another bowl, mix chopped strawberries with granulated sugar, lemon juice, and cornstarch.
  7. Spread strawberry filling over the crust and sprinkle reserved crumble mixture on top.
  8. Bake for 30-35 minutes until golden brown. Allow to cool completely before cutting into squares.
