  • 3 tablespoons granulated sugar for filling
  • 1 teaspoon corn starch for filling
  • 3/4 cup powdered sugar for glaze
  • 1 1/22 1/2 teaspoons milk or cream for glaze

Instructions

  1. Preheat your oven to 425°F (220°C) and line a muffin pan with paper liners.
  2. In a bowl, mix together flour, sugar, and salt for the streusel topping; then add melted butter to create coarse crumbs.
  3. In another bowl, combine flour, baking powder, and salt for the muffins.
  4. Whisk egg and sugar until combined; then add yogurt, vegetable oil, and vanilla.
  5. Fold wet ingredients into dry ingredients gently until just combined; then add diced strawberries.
  6. For the cream cheese filling, mix cream cheese with sugar, cornstarch, and vanilla until smooth.
  7. Fill muffin liners with batter halfway, add cream cheese filling, then cover with more muffin batter.
  8. Top each muffin with streusel crumbs and reserved strawberry pieces.
  9. Bake for 22-25 minutes or until golden brown; cool before drizzling glaze on top.
