  • 6 small flour tortillas
  • ½ cup granulated sugar
  • 1 tbsp ground cinnamon
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup heavy whipping cream
  • 1 cup fresh or frozen strawberries, chopped
  • ¼ cup granulated sugar (for topping)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Preheat your oven to 375°F (190°C). In a bowl, mix together granulated sugar and cinnamon. Brush each tortilla with melted butter and coat them with the cinnamon-sugar mixture. Drape each tortilla over an oven rack and bake for about 8-10 minutes until golden brown.
  2. In a mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract; beat until smooth. Whip the heavy cream in another bowl until stiff peaks form, then gently fold it into the cream cheese mixture.
  3. In a saucepan over medium heat, combine strawberries, granulated sugar, and lemon juice; simmer until juicy. Add the cornstarch slurry and stir until thickened.
  4. Pipe the cheesecake filling into cooled taco shells and top with strawberry sauce. Serve immediately.
