  • 1 ¼ cups finely chopped Medjool dates
  • 8 oz boiling water
  • ½ cup unsalted butter (room temperature)
  • 1 cup packed golden brown sugar
  • 4 large eggs
  • 1 ¾ cups all-purpose flour
  • ½ tsp baking powder
  • 1 tsp baking soda
  • 2 Tbsp instant coffee granules
  • ¼ cup unsalted butter (for sauce)
  • 1 cup packed brown sugar (for sauce)
  • 2 cups heavy whipping cream (for sauce)

Instructions

  1. Soak the chopped dates in boiling water for about 10 minutes.
  2. Cream together the butter and golden brown sugar until fluffy.
  3. Beat in the eggs one by one until well blended.
  4. In another bowl, whisk together flour, baking powder, baking soda, coffee granules, and salt.
  5. Gently fold the dry ingredients into the wet mixture along with the soaked dates and any remaining water.
  6. Pour into a greased baking dish and bake at 350°F (175°C) for about 60 minutes until firm.
  7. For the sauce, melt butter in a saucepan, add brown sugar and cream, stirring until thickened.
  8. Serve warm with the sauce drizzled generously over the pudding.
