Scale
  • 5 ounces chopped baby spinach
  • 8 ounces whole-wheat spaghetti
  • 1/2 cup oil-packed sun-dried tomatoes, slivered
  • 1/2 cup onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup low-sodium vegetable or chicken stock
  • 1/2 cup sour cream
  • 1/4 cup parmesan cheese, grated (or nutritional yeast for a vegan option)
  • 1 tablespoon unsalted butter

Instructions

  1. Cook the whole-wheat spaghetti in salted boiling water according to package instructions until al dente. Reserve some cooking water before draining.
  2. In a large skillet over medium heat, melt the butter and sauté onions until translucent. Add minced garlic and red pepper flakes; cook until fragrant.
  3. Stir in sun-dried tomatoes and their oil; cook for two minutes before adding spinach. Stir until wilted.
  4. Pour in vegetable or chicken stock; let simmer for five minutes. Season with salt and pepper, then mix in sour cream until well combined.
  5. Toss in the cooked spaghetti, ensuring it's coated in the sauce. Adjust consistency with reserved pasta water if needed.
