  • 2 cups cooked chicken (shredded or chopped)
  • 1 cup corn (drained and rinsed)
  • 1 cup black beans (drained and rinsed)
  • 1 cup spinach (chopped)
  • 1 cup diced red bell pepper
  • 1/4 cup diced jalapeno (de-seeded)
  • 1/2 TBS cumin
  • 1/2 TBS chili powder
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 cups Monterey jack cheese
  • 20 egg roll wrappers

Instructions

  1. In a large bowl, combine cooked chicken, corn, black beans, spinach, red bell pepper, and jalapeno.
  2. Add cumin, chili powder, salt, and black pepper to the mixture; stir well to combine.
  3. Fold in shredded Monterey jack cheese until evenly mixed.
  4. Lay an egg roll wrapper on a clean surface with one corner facing you. Spoon 2-3 tablespoons of filling into the center.
  5. Fold the bottom corner over the filling, then fold in both side corners tightly before rolling up completely. Seal edges with water.
  6. Repeat until all filling is used; place rolled egg rolls on a parchment-lined baking sheet.
  7. If not cooking immediately, freeze egg rolls until solid.
