  • 4 large organic sweet potatoes, peeled and cubed
  • 23 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup almond milk
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked and drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Prepare the sweet potatoes by boiling them until tender (15-20 minutes). Drain and return to pot.
  2. Add olive oil, almond milk, vanilla extract, butter, brown sugar, cinnamon, nutmeg, and allspice to the sweet potatoes. Mash until smooth.
  3. Spread the mixture in a baking dish. Layer with soaked raisins, vegan marshmallows, and raw pecans.
  4. Drizzle with maple syrup and bake at 350°F (175°C) for about an hour until golden brown.
  5. Let cool slightly before serving.
