  • 1 3/4 cups all-purpose flour
  • 1 1/3 cups brown sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 3/4 cup milk
  • 1/3 cup melted butter
  • 1/2 cup sourdough discard
  • 1 tbsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a small bowl, mix together the cinnamon and 1/3 cup of brown sugar; set aside.
  3. In a medium bowl, whisk together the flour, remaining brown sugar, baking powder, and salt.
  4. In another bowl, combine the egg, milk, melted butter, vanilla extract, and sourdough discard until smooth.
  5. Gently fold the wet ingredients into the dry ingredients until just combined.
  6. Pour half of the batter into the prepared pan. Sprinkle with three-quarters of the cinnamon sugar mixture, then layer on the remaining batter followed by the rest of the sugar mixture.
  7. Use a knife to create swirls through the batter gently.
  8. Bake for about 45 to 50 minutes or until a toothpick comes out clean.
  9. Allow cooling for about 20 minutes before transferring to a wire rack.
