  • Salt & pepper (to taste)
  • 1 tablespoon olive oil
  • 2 tablespoons butter (divided)
  • 1 medium onion (sliced)
  • 1 clove garlic (minced)
  • 1/2 cup chicken broth
  • 1 cup sour cream (full-fat)
  • Optional: Fresh chopped parsley for garnish

Instructions

  1. Cut chicken breasts in half lengthwise and season with garlic powder, salt, and pepper.
  2. Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat; sear the seasoned chicken for about 5-6 minutes on each side until golden brown.
  3. Remove chicken from the skillet; reduce heat to medium and add remaining butter along with sliced onions. Sauté until onions are softened and lightly browned (about 10-15 minutes).
  4. Stir in minced garlic; cook for an additional 30 seconds.
  5. Pour in chicken broth, scraping up any brown bits from the skillet, then stir in sour cream until smooth.
  6. Return the chicken to the skillet, spoon sauce over it, and let heat through gently before serving.
